Buttermilk Oat Bran Pancakes
1 cup oat bran 1/2 cup whole wheat pastry flour 2 teaspoons baking powder 2 teaspoons sugar 1 3/4 cups nonfat or low fat buttermilk 1/4 cup fat free egg substitute or 2 egg whites lightly beaten
Combine the oat bran, flour, baking powder and sugar in medium bowl, and mix well. Add the buttermilk and egg, and stir with wire whisk till mixed. Coat a large griddle or nonstick skillet with cooking spray, and preheat over medium heat. Pour 1/4 cup of the batter onto the griddle for each pancake. Cook until top is bubbly and the edges are set. Turn and cook until golden brown. Serve hot.
