Summer Squash Au Gratin Ingredients: 6 cups yellow or green zucchini, diced in half-inch pieces 1 cup celery, coarsely chopped 2 tablespoons minced onion 4 tablespoons butter 1/2 cup sour cream 1 cup cheddar cheese, shredded 2 slices bacon, cooked, crumbled 1/3 cup grated parmesan cheese Directions: Sauté the vegetables in the butter for a minute or two, just until they are softened and barely tender. Do not overcook.
Add sour cream, cheddar cheese and bacon. Mix and place in a well-greased casserole dish. Sprinkle Parmesan over the top and bake uncovered at 350 degrees F for about 30 minutes. Makes six servings.
