Lemon Broccoli and Peppers
Ingredients: 1 pound broccoli florets 1 medium red bell pepper, in 1-inch dice 2 tablespoons butter 1 tablespoon lemon juice 1/8 teaspoon black pepper 1 teaspoon lemon zest
Directions: Microwave broccoli and peppers with 2 tablespoons of water in a covered microwave-proof dish until tender-crisp. Drain. Meanwhile, melt the butter. Stir in lemon peel, lemon juice, and pepper. Drizzle over broccoli mixture, and serve. Serves four.
Per serving: 7.8g carbohydrates; 0.7g fiber; 3.6g protein; 6.2g fat; 15.3mg cholesterol; 30.2mg sodium; 89.8 calories

That sounds really good and low carb. The best of both worlds.
